Ricotta Cookies
1 stick butter or margarine 1/4 cup ricotta cheese 1 teaspoon vanilla 1 cup sugar 1 egg 2 cups flour 1/2 teaspoon baking soda 1/2 teaspoon salt
Allow butter or margarine to soften. Blend with ricotta until creamy. Add vanilla. Mix well. Add sugar gradually, beating until well blended. Add egg and mix well. Slowly stir in dry ingredients and blend well. Drop from a teaspoon on greased baking dish.
Bake in moderate oven (I use 350) for 10 minutes.
