RICOTTA CAKE
1 yellow cake mix 2 lb. ricotta cheese 4 eggs, beaten 1 cup of sugar 1 tsp. anise extract
Mix cake as directed on package. Pour in greased and floured 13x9-inch pan.
Mix ricotta with eggs, sugar and extract. Pour over cake mix (do not blend ricotta mix with cake).
Bake at 350 for 60 minutes. Cool and put in refrigerator.
When ready to serve cut into squares and put into cup cake papers. Sprinkle with powdered sugar. I use whipped cream or cool whip. It's so good easy to make.
