When I read your post I realized I could make your dip Dean Ornish friendly so I made it with Fat free cream cheese, fat free cottage cheese and Lisanatti Premium Soy-Station Mozzarella Style Cheese Alternative (my favorite brand of cheese alternative so far). The dip was great, then I had the idea to add salsa to it to make it even more appealing to my DH. The result was wonderful, hot or cold. I've used it as a dip both with and without the added salsa, as a pasta sauce (again both ways, I think mushrooms would be a great addition to the plain) and as a sandwich spread. Yesterday I brought home a Subway veggie sandwich on a wheat bun I added some leftover roasted eggplant slices (rewarmed), some slices of the soy cheese and a bit of your dip with the salsa added.
