Mock Salisbury Steak

1/2 cup minced onion
1 clove garlic minced
4 1/2 tbsp. butter, divided
1 1/2 lbs. ground beef
2 eggs
4 oz. bread crumbs
2 tbsp. fresh chopped parsley
1 lb. sliced mushrooms
3 tbsp. flour
1 1/2 cups beef broth

Saute onion and garlic in 1 1/2 Tbsp. butter until translucent and set aside to cool.

Mix beef in bowl with eggs, bread crumbs, and parsley. Add cooled onion mixture. Form mixture into 6 patties and saute in pan with 1 Tbsp. butter until golden brown on both sides. Set aside in a casserole dish. Patties should still be pink inside.

Add mushrooms to pan and quickly saute about 4 minutes. Set aside.

Melt 2 Tbsp. butter in pan and add flour. Cook 1 minute and whisk in beef broth. Add sauteed mushrooms and pour over patties in casserole.

Bake at 350F for 30 minutes.
