Cherry Vanilla Fudge
2 cup granulated sugar 1/2 cup dairy sour cream 1/3 cup light corn syrup 2 tbl butter 1/4 tsp salt 2 tsp vanilla 1/2 cup quartered candied cherries 1 cup coarsely chopped walnuts
In 2 quart glass measuring cup with handle, combine sugar, sour cream, corn syrup, butter and salt. Microwave on high 5 minutes. Stir well until sugar dissolves.
Microwave on high 6 minutes (or until mixture reaches 236 degrees). Let stand 15 minutes. Do Not Stir.
Add vanilla; beat until mixture starts to loose its gloss (about 6 minutes).
Stir in cherries and walnuts. Quickly pour into buttered 8 1/2 x 4 1/2 inch loaf pan. Cool and cut into squares.
Makes about 1 1/2 pounds.
