Spoonbread
3 cups milk 1 cup cornmeal 1-1/2 teaspoons salt 2 tablespoons fat or oil 3 eggs
Mix milk, cornmeal, salt and fat or oil in a saucepan. Cook and stir over medium heat until thickened.
Beat eggs in large bowl. Slowly pour and stir cornmeal mixture into eggs. Pour batter in a greased 9- by 9- by 2-inch baking pan.
Bake at 400 degrees F (hot oven) 35 to 40 minutes until top of spoonbread is firm. Serve at once.
