Casseroled Potatoes
leftover boiled potatoes, peeled and sliced (at least 1-1/2 cups) 2 tbsp butter or margarine 1 tbsp chopped onion 2 tbsp flour salt and white pepper to taste 3/4 cup milk 1/4 cup cheddar cheese slivers 1 to 2 hard-cooked eggs, sliced 1/4 cup buttered bread crumbs
Melt butter in a saucepan. Saute onion.
Blend with flour until smooth. Season with salt and pepper. Gradually add milk, stirring constantly until thick and smooth.
Arrange potatoes, cheese, hard-cooked eggs and white sauce in alternate layers in well-buttered baking dish. Top with buttered crumbs.
Bake in moderate 350 F oven until well browned.
VARIATION: Sauteed mushrooms and/or sliced cooked meat may be added to make a hearty main dish.
