Salmon Cole Slaw

1 (17 oz.) (500g) can of salmon
1/4 of a small cucumber, peeled and diced
3 tablespoons of salad dressing or mayonnaise
lemon juice
pepper and salt
1 small firm Savoy cabbage
2 hard boiled eggs
2 medium tomatoes

Flake the salmon, add cucumber and salad dressing. Season with lemon juice, pepper and salt to taste.

Shred the cabbage and put in a serving dish. Pile the salmon on top and garnish with egg slices and wedges of tomato.
