Veggie and Grain Turkey Joes
1 pound ground turkey 1 cup chopped onion 1/3 cup bulgur 1 tablespoon chili powder 1/4 teaspoon salt 1/4 pound coarsely chopped mushrooms 1/2 cup shredded carrots 1 can (15 ounces) tomato sauce 6 whole wheat sandwich buns (6-inches each), split and toasted
In large non-stick skillet, over medium-high heat, saute turkey and onion 5 to 7 minutes, or until turkey is no longer pink. Drain and return mixture to skillet.
Stir in bulgur, chili powder, and salt. Cook, stirring constantly, 1 to 2 minutes or until mixture is combined.
Add mushrooms, carrots, and tomato sauce; bring to boil. Reduce heat to low, cover and simmer 10 to 15 minutes, or until mixture is heated throughout.
Serve over toasted buns.
