Shrimp and Green Mango Salad - (Goi Xoai Tom Nuong) Oriental Vietnamese
12 medium shrimp 1 cup finely-sliced green mango 1 tbsp chopped polygonum (rau ram) leaves 1/4 cup Nuoc Cham
GARNISH: 1 small red chili finely sliced 2 tbsp fried shallots 2 tbsp chopped chives
Peel and devein the shrimp. Quickly steam in a pan with very little water until bright pink and tender. Remove from pan and cool.
In a large bowl, combine the shrimp, mango, rau ram and Nuoc Cham. Toss well. Arrange on a platter. Top with garnish.
