Glorious Greens with Almond Raspberry Vinaigrette
4 quarts mixed greens* Almond Raspberry Vinaigrette (recipe below) 1 cup sliced natural almonds, toasted 1/2 pint raspberries
Toss greens with Almond Raspberry Vinaigrette. Sprinkle with almonds and raspberries; toss gently before serving.
*Use a combination of all available market greens, mixing light and dark colors, mild and sharp flavors.
Makes 8 servings
Almond Raspberry Vinaigrette Makes 3/4 cup
2 Tbsp. slivered almonds, toasted 3 Tbsp. raspberry vinegar 1 tsp. mustard 1/4 tsp. pepper 1/2 cup almond oil
Grind almonds in blender or food processor. Add vinegar, mustard and pepper; whir until smooth. With machine running, add oil in a slow, steady stream until mixture is blended.
