GLAZED PEACH PIE

Un-equalled summer pie! Has the wonderful flavor of fresh peaches.

One 9-inch baked pie shell
3 1/2 cups peeled, sliced, fresh ripe peaches (approximately)
GLAZE:
1 cup sugar
1/4 cup cornstarch
Dash of salt
cinnamon and nutmeg (fresh ground if possible), to taste
1/2 cup fresh orange juice
1 tbsp fresh lemon juice
2 1/2 cups pureed, peeled, fresh peaches

In a small saucepan, combine first 4 ingredients. Stir in orange juice, lemon juice, and pureed peaches.

Cook on medium heat until thickened (about 5 minutes).

Pour half of the mixture into the baked pie shell.

Top with sliced peaches and brush with remaining half of the glaze. Chill at least 3 hours. Top with whipped cream when served.
