BLUE CHEESE STUFFED SHRIMP
6 cups water 2 dozen unpeeled jumbo fresh shrimp 1 (3oz) package cream cheese, softened 1 ounce blue cheese, crumbled 1 tsp finely chopped green onion 1/2 tsp prepared mustard 3/4 cup finely chopped fresh parsley
Bring water to a boil; add shrimp, and cook 3-5 minutes. Drain well; rinse with cold water. Chill.
Peel and devein shrimp. Butterfly shrimp, leaving tails intact.
Combine cream cheese, blue cheese, green onion, and mustard in a bowl.
Stuff each shrimp with 1 teaspoon cheese mixture. Roll cut side of shrimp in chopped parsley.
Cover and chill at least 1 hour.
Yield: 2 dozen
