ROAST BEEF SANDWICHES
3/4 lb. top sirloin steak 8 bell peppers, seeded and sliced in quarters 1 medium onion, chopped 3 cloves fresh garlic, minced Olive oil Salt and pepper to taste 8 French Rolls, halved and spread with garlic butter Garlic Butter (recipe follows)
Barbeque or broil steak to your taste of doneness. Slice the steak thin and keep warm.
In a skillet, saute peppers, onions, and garlic in olive oil. Add salt and pepper to taste and cook until tender.
Spread rolls with garlic butter and either heat in the oven, or toast lightly under the broiler or the BBQ grill.
Place steak slices on bottom half of roll and top with pepper and onion mixture, and add top half of roll.
GARLIC BUTTER: 1/2 cup butter, soft 2 to 3 cloves fresh garlic, pressed
Cream butter. Add pressed garlic and beat until fluffy. Makes 1/2 cup.
