DORITO SALAD
Especially good served with cheese enchiladas and re-fried beans.
SALAD: 1 head of lettuce torn in bite-size pieces 2 to 3 medium meaty tomatoes, cut into medium-size cubes 2 avocados, cubed (lightly sprinkle with fresh lemon juice to retain their color) 8 oz Cheddar Cheese, grated 4 green onions, chopped 1 small can chopped black olives, drained GROUND BEEF MIXTURE: 1 1/2 lbs lean ground beef 1 small onion, finely chopped 3 cloves garlic, crushed 3/4 pkg dry Taco Seasoning TO SERVE: 1 medium size pkg of Doritos, regular flavor, broken up 1 pkg dry Good Seasons Italian Dressing Mix, prepared according to directions
SALAD: Combine all salad ingredients in a large salad bowl. Cover with Saran wrap and refrigerate.
GROUND BEEF MIXTURE: Place ground beef, chopped onions, and crushed garlic in a skillet. Add 3/4 pkg Dry Taco Seasoning and work into the raw meat with the back of a large spoon. Cook over medium heat stirring often, until onions are done and meat is cooked through, but not overcooked. Drain and let cool.
TO ASSEMBLE SALAD: Drain any liquid from the bottom of the salad bowl; add the cooled ground beef mixture and Doritos (broken up), to salad mixture. Toss lightly and add the Good Seasons Italian dressing.
