DIVINE STUFFED MUSHROOMS
These can be prepared the day before or at the last minute. Prepare a lot because they'll disappear fast.
20 fresh mushrooms 1/2 cup fresh parsley, chopped 1/4 cup (1 1/2 oz) freshly grated Parmesan cheese 4 cloves fresh garlic, finely chopped 2 tbsp soft butter
Preheat broiler.
Clean mushrooms with a damp paper towel and remove the stems.
Mix together the rest of the ingredients to form a firm stuffing mixture.
Place approximately 1 tbsp stuffing mixture into each mushroom.
Place stuffed mushrooms on a flat baking sheet and set it on a baking rack 6-inches below a pre-heated broiler.
Broil for 4-5 minutes until mushrooms are cooked 'al dente' and still firm. Do Not Overcook!
