CHEESE STUFFED MEATLOAF
1 pound ground beef 1 cup spaghetti sauce, divided use 1 large egg, slightly beaten 1/4 cup dry bread crumbs Salt and pepper 1 cup shredded mozzarella cheese, divided use 1 tablespoon finely chopped fresh parsley (optional)
Heat oven to 350 degrees. Line a 13- by 9-inch baking pan with waxed paper.
In a large bowl, combine beef, 1/2 cup sauce, egg and bread crumbs. Season with salt and pepper.
Shape meat into a 12- by 8-inch rectangle on the waxed paper in the baking pan.
Combine 3/4 cup of the cheese with the parsley. Sprinkle the mixture lengthwise down the center of the meat, leaving about 1/2-inch border on each edge. Starting at one of the longer sides, lift the waxed paper to roll the meat jelly-roll style over the filling. Remove the waxed paper. Pinch the meat at ends and seam to seal.
Bake uncovered for 45 minutes.
Pour remaining sauce over meat and sprinkle with remaining cheese. Bake an additional 15 minutes or until sauce is heated through and cheese has melted. Let stand 5 minutes before serving.
