TURKEY MEATBALL SANDWICH
1 pound ground turkey breast 1/2 cup plain breadcrumbs 1 egg white 2 garlic cloves, minced 3 tablespoons parsley, finely chopped 1/4 cup onion, chopped 1 can whole tomatoes (8 ounces), drained and coarsely chopped 1 can tomato sauce (4 ounces) 1 teaspoon dried Italian seasoning 4 small hard rolls, split 2 tablespoons grated Parmesan cheese
Combine the ground turkey, breadcrumbs, egg white, parsley, and garlic in a medium bowl and mix well. Form mixture into 16 small meatballs (about the size of a golf ball).
Spray a large nonstick skillet with cooking spray and heat over medium heat. Add meatballs and cook about 5 minutes or until browned on all sides. Remove meatballs from skillet.
Add onion to skillet and cook about 2-3 minutes.
Stir in tomatoes, tomato sauce, Italian seasoning, and meatballs and simmer covered for 30 minutes.
Place 4 meatballs in each roll, spoon sauce over meatballs, sprinkle with cheese and serve.
