CARROT BARS AND CREAM CHEESE FROSTING
CARROT BARS: 2 cups sugar 1 1/4 cups oil 4 eggs, beaten 3 jars baby food strained carrots 3 tsp. cinnamon 2 tsp. baking soda 3/4 tsp. salt 2 cups flour FROSTING: 1 (8 oz.) pkg cream cheese, softened 1 stick (1/2 cup) butter, softened 2 tsp. vanilla 2 cups powdered sugar
Preheat oven to 350 degrees F. Grease large jelly roll pan (cookie sheet with sides).
Stir together sugar, oil, and eggs.
Stir in carrots, cinnamon, baking soda, and salt.
Add flour gradually; mixing with a spoon, not an electric mixer. Spread in prepared pan.
Bake at 350 degrees for 25-30 minutes. Cool in pan on rack.
FOR FROSTING: Blend cream cheese and butter. Stir in vanilla. Gradually stir in powdered sugar. Spread over cooled bars.
