CREAM OF BROCCOLI SOUP
3/8 cup onion, chopped 1/4 cup water 2 tbsp. butter 1 (8 oz.) regular or light cream cheese 1 1/2 cups milk 1 (10 oz.) frozen chopped broccoli, cooked, drained*
2 tbsp. chicken flavor soup base (powder form)
Saute onion in water and butter.
Add cream cheese, stirring constantly until melted.
Add milk, broccoli, and chicken soup base. Cook for 3 minutes, stirring constantly.
*VARIATION: For mushroom soup, add cooked mushrooms instead of broccoli.
