DELICIOUS MEAT FILLING FOR TACOS
MEAT FILLING: 1 lb lean ground beef 1 tsp chili powder 1/2 tsp ground cumin Salt 5 or 6 tbsp tomato paste FOR TACOS: corn tortilla shells grated cheddar cheese chopped raw onion diced tomatoes shredded lettuce hot sauce (optional) sour cream
Sprinkle the chili powder and cumin on the raw meat; mix it in thoroughly with the back of a large spoon or your hands. Salt to taste.
Place the seasoned meat in a skillet and cook over medium heat, stirring and breaking up the meat as it cooks. When it's about 3/4 cooked, drain off fat and add 5 or 6 tbsp of the tomato paste; mixing it in well. When the meat is cooked through, but not dry (do not overcook), remove to a serving bowl.
Place about 3 tablespoons of the cooked meat in a fried warm, semi-crisp (you have to be able to fold it) cornmeal taco shell, and add grated cheddar cheese, chopped raw onions, diced tomatoes, shredded lettuce, hot sauce if desired, and lastly, sour cream on top. |
