Glazed Strawberry Tart
1 1/3 C all purpose flour 1/2 C finely ground almonds 1/3 C sugar 1 t grated lemon rind 1/4 t salt 6 T cold butter, cut into pieces 1 egg 1 t vanilla extract 3/4 C seedless raspberry or strawberry jam 1 t lemon juice 2 pints strawberries, hulled and sliced
Stir first 5 ingredients together. Cut in butter until course crumbs form. whisk together egg and vanilla. Stir into flour mixture, mix until dough forms. Shape into a disk, wrap in plastic wrap and refridgerate overnight. Pre heat oven to 350 degrees. Grease and flour a baking sheet. Place dough on baking sheet, pat into a 10 inch circle, forming a high edge. prick entire crust with a fork. bake until slightly browned, about 25 minutes. Cool on wire rack. Melt jam with lemon juice until spreadable. Spread 1/2 c jam mixture over cooled crust. arrange berries on top. Brush with remaining jam mixture. serve with whipped cream if desired.
