LAST-MINUTE LEMON CHICKEN
1 tablespoon olive oil 1 (1 1/4-pound) package PERDUE® Fit & Easy® Fresh Skinless & Boneless Chicken Breasts 3/4 cup white wine 2 teaspoons fresh lemon juice 1 tablespoon brown sugar 1 tablespoon butter or margarine 2 tablespoons minced fresh parsley, 1 tablespoon minced fresh thyme, or 2 teaspoons minced fresh rosemary 1 teaspoon lemon pepper 1/4 teaspoon salt
Heat oil in a large, preferably non-stick skillet over medium heat.
Add chicken; cook 5 to 7 minutes on each side, until cooked through. Remove to platter and keep warm.
Add wine, lemon juice and brown sugar to skillet. Bring to a simmer, and cook 3 to 4 minutes, until sauce is reduced by half.
Swirl in butter or margarine, desired herb, lemon pepper and salt.
Spoon sauce over chicken and serve.
