This is one my husband recently brought home. It has become a staple in my meal planning. Hope you enjoy it as much as we do!
FRUIT PIZZA WITH LEMON SAUCE
1 pkg refridgerated sugar cookie dough 2 Tbsp seedless raspberry jam (I use seeded) 2/3 cup lemon sauce (recipe follows) 2 cups fresh, not frozen raspberries 2 cups fresh, not frozen blueberries 2 cups fresh strawberries, sliced
Press cookie dough into a greased 10 inch pizza pan.
Bake at 350 for 13 minutes or until golden brown. Cool completely.
Top with raspberry jam, then lemon sauce then berries. Scatter them evenly across entire pizza. Serve immediately or refridgerate any leftovers.
LEMON SAUCE: 3/4 cup sugar 1 Tbsp grated lemon zest 2 large eggs 2/3 cup fresh lemon juice (about 3 large lemons) 3 Tbsp unsalted butter
Cook first 3 ingredients about 3 minutes or until all sugar is dissolved and it is light in color.
Add lemon juice and butter cook 4 minutes or until mixture lightly coats the back of a spoon. Cool. Mixture will thicken as it cools.
