PEACHY SUMMER SALAD
FOR THE DRESSING: juice of 1/2 lemon 2 tbsp olive oil 1 tsp wholegrain mustard 1 clove garlic, crushed 75g feta cheese FOR THE SALAD: 2 fresh peaches, stoned and quartered 1 iceberg lettuce, shredded 75g walnuts, halved 4 tomatoes, quartered 1/2 cucumber, cubed 4 spring onions, finely chopped 225g new potatoes, cooked 25g olives, halved 10 capers 1 tbsp parsley, chopped 25g croutons Combine the dressing ingredients except the feta cheese and shake together in a screwtop jar. Then add the cheese to soak up the flavours.
Mix all the salad ingredients together in a large bowl.
Just before you serve it, pour on the dressing and cheese and toss thoroughly.
