This is a family favorite. I first tried it at a Luau. The Tomatoes have a fantastic flavor!
CURRY MARINADE FOR TOMATOES, CUCUMBERS AND MUSHROOMS
MARINADE: 1/2 cup salad oil 1/4 cup cider vinegar 1 large garlic clove, pressed 1 tbsp chopped parsley 1 tsp sugar 1 tsp curry powder (i use madras) 1 tsp salt 1/4 tsp pepper ------- about 4 large tomatoes, sliced (we like beefsteak) about 2 regular-size sliced cucumbers, sliced about 5 large sliced mushrooms
Combine the marinade ingredients and mix well.
Marinate the tomatoes, cucumbers, and mushrooms, sliced not too thick, in marinade 1-3 hours. It does not need to be refrigerated if marinating less than 2 hours.
Drain and serve on lettuce. (I usually leave in the marinade to serve as it is soooo good.)
I give no exact amounts for the vegetables because it depends on type and size.
