Swanson Brothy Shrimp and Rice Scampi
Ladle up some real flavor in “big bowl” fashion with Swanson® Broth as the aroma of garlic and shrimp rises up from the steaming broth.
2 cans (14 oz. each) Swanson® Chicken Broth (3 1/2 cups) 3/4 cup uncooked regular long-grain white rice 1 tbsp. olive oil 1 lb. fresh or frozen large shrimp, shelled and deveined 4 cloves garlic, minced 2 tbsp. lemon juice 2 green onions, thinly sliced
Heat broth in saucepan to a boil. Add rice. Cover and cook over low heat 20 minutes.
Heat oil in skillet. Add shrimp and garlic. Cook and stir 5 minutes or until done.
Place shrimp in bowls. Stir lemon juice into rice mixture and pour over shrimp. Top with onions.
