Pork Burgers with Red Pepper and Mango Salsa

PORK BURGER:
454g (1lb) minced pork
1 onion, finely chopped and sauteed in oil
1 to 2 cloves garlic, chopped
1 chile pepper, chopped
Handful coriander & scallions, chopped
Salt
Black pepper
RED PEPPER AND MANGO SALSA:
1 mango, diced
1 avocado, diced
1 red pepper, diced
Handful coriander & scallions, chopped
2 to 3 tbsp oil
1 chile pepper, chopped
1/2 tsp sugar
Juice 1 lime or 1/2 lemon
Salt
Black pepper

Mix the burger ingredients together. Shape into 4 burgers.

Grill 8-10 minutes or until fully cooked.

Mix the salsa ingredients together. Serve with the burger.
