SARALEGUI BLACK BEAN GUACAMOLESource: Our Latin Table: Celebrations, Recipes & Memories, by Fernando Saralegui, 2003 1 cup frozen corn, roasted 1 cup canned black beans, rinsed 1/2 cup Roma tomatoes, seeded & drained 1 medium red onion, diced 1/4 cup chopped cilantro 1/4 cup lime juice 4 ripe avocadoes, peeled & diced Salt & pepper to taste Tortilla chips Take the cup of frozen corn and roast under broiler in a cookie sheet; shake pan to caramelize the whole kernels. This process takes only a few minutes and needs some supervision (each oven is different). In a medium non reactive bowl, place the corn, beans, tomato, onion, and cilantro, tossing to combine. Drizzle the lime juice over the mixture and toss again. Add the avocado, salt and pepper and gently toss, careful not to mash the avocados. Transfer the Guacamole to a serving bowl and serve with chips.
