To say these are delicious is an understatement!
1 (5 lb) (approx) eye of the rib roast 2 large onions, sliced in rounds 6 cloves of garlic, chopped 8 beef bouillon cubes 2 pkgs of dry Good Seasons Italian Dressing Mix 2 to 3 bay leaves Pepper to taste, but NO salt 3 to 4 green bell peppers, sliced in lengthwise strips and added last. Large Italian rolls cut in half lengthwise
In large cooking pot, place meat and cover with water. Add onions, garlic, bay leaves, bouillion, dry dressing mix and pepper. Cover and simmer until meat is very tender.
Add green pepper slices and simmer until tender.
Remove meat from the liquid and place on a cutting board. Let meat rest until cool enough to handle.
Slice meat thinly and place on open faced sandwich rolls. Place onion and peppers on top and add liquid as desired.
