BROWN SUGAR CAKE

3 cups brown sugar, divided
1 cup lard
4 eggs, separated
1 cup sour milk
2 cups flour
1 tsp cinnamon
1 tsp ground cloves
1 tsp allspice
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt

Preheat oven to 350F. Grease a 9-inch square or round baking pan.

Beat together 2 cups of the brown sugar and lard until creamy. Beat in 4 egg yolks and 2 of the egg whites. Add milk.

Stir in flour and remaining dry ingredients. Pour into prepared pan.

TOPPING:
Beat the remaining 2 egg whites with the remaining 1 cup brown sugar. Spread over cake dough.

Bake all in a moderate (350F) oven for about 40 minutes.
