CATFISH PARMESAN
2/3 cup freshly grated parmesan cheese 1/4 cup all purpose flour 1 tsp paprika 1/2 tsp salt 1/4 tsp pepper 1 egg, beaten 1/4 milk 5 to 6 catfish fillets (about 2 pounds) 1/4 cup margarine, melted 1/3 cup sliced almonds
Combine first 5 ingredients; stir well.
Combine egg and milk; stir well. Dip fillets in egg mixture; dredge in flour mixture. Arrange in a lightly greased pan and drizzle with margarine. Sprinkle almonds on top.
Bake 35-40 minutes at 350 degrees or until fish slakes easily with a fork.
