SOUTHERN FRIED FISH
5 to 10 pounds crisco vegetable shortening 2 cups corn meal 1 cup flour 1 tbsp salt 1 tsp pepper 2 1/2 pounds fresh fish fillets (I like Bass, Crappie or Bream)
In a deep fryer over med high heat melt Crisco.
Mix dry ingredients in a large paper bag. Drop fillets in 1-2 at a time and shake well.
Drop into hot grease 4-6 at a time and fry until golden brown. About 4 minutes. Drain on paper towels and keep warm. Repeat with remaining fish.
