MARMITAKO
1 onion, diced small 1 green pepper, diced small 2 garlic cloves, diced small 2 dl oil 1 small hot pepper 2 ripe tomatoes 1.5 kilo potatoes 1 kilo. bonito (tuna) 1 bunch of parsley, chopped white wine salt Saute the onion, green pepper, and garlic in oil. Add the small hot pepper and removed when softened.
Dip tomatoes in scalding water, peel, remove seeds, and cut into pieces. Add them to the green vegetables and simmer.
Peel potatoes and chop them in big pieces. Add them to the vegetables, stir lightly and cover the top with tuna. Add salt, cover, and simmer over low heat until potatoes are done begin thicken the mixture.
Remove from heat and remove the tuna; set aside. Add enough white wine to make the desired thickness.
Cut tuna into square pieces, salt them and add to the potatoes. Set aside for 5-7 minutes.
When serving, sprinkle with parsley.
