YUMMY CARROT-RAISIN SALAD
Makes a large salad for a crowd.
7 to 8 large carrots, peeled and coarsely grated 1 cup raisins 1 1/2 cups mayonnaise 3 tbsp. honey 3 tsp. vinegar 1 tsp. cinnamon
In a large bowl, place the grated carrots and raisins. Mix well.
In a smaller bowl, thoroughly mix the mayonnaise, honey, and vinegar; add cinnamon and mix well. Pour over the carrots and raisins and toss until well mixed.
Cover with Saran Wrap and place in the refrigerator to marinate for at least 2 hours or longer if possible. Refrigerate leftovers.
