WHOLE WHEAT BREAD
2 yeast cakes 3/4 cup warm water 1 1/2 cups milk 3/4 cup brown sugar 3/4 cp shortening 1 tbsp salt 3 1/2 cups sifted whole wheat flour 3 cups white bread flour
Soak yeast in 3/4 Cup warm water.
Heat to simmering 1 1/2 cup sweet milk, 3/4 Cup brown sugar, shortening and salt. Cool to lukewarm.
Add yeast and water. Add sifted whole wheat flour. Mix for 5 minutes with electric mixer.
Add 3 Cups white flour and stir well. Turn onto dough board and knead until dough is smooth and elastic. Place in an oiled bowl, cover and let rise in a warm place until doubled.
Knead slightly to original size. Cut in half. Shape into 2 loaves, place in oiled pans and let rise again until doubled in size.
Bake in 350 degree oven 55 minutes or until brown*. Place on wire racks to cool.
*If soft crust is desired, brush with cream or butter before baking.
