CHICKEN CARNIVALE
1/2 cup mayonnaise 2 tablespoons grated, unsweetened coconut 1 tablespoon Dijon whole grain mustard 1 tablespoon honey Salt to taste 2 Orange-Cranberry English Muffins, split and toasted 1 ripe mango, peeled, pitted and thinly sliced 8 ounces thinly sliced smoked chicken 1/4 cup dried cranberries Thin strips orange zest, for garnish
Combine mayonnaise, coconut, mustard, honey, and salt in a small mixing bowl; blend well.
Arrange mango slices on muffin halves. Top each with 2 ounces smoked chicken.
Top with a dollop of the mayonnaise mixture. Garnish with cranberries and orange zest.
