CHEESE AND ONION DIP

So simple, but so good. The original recipe calls for Swiss but I like it better with cheddar. Also, don't use preshredded cheese. It tastes better with freshly grated cheese.

1 cup freshly grated cheddar
1 cup mayonnaise (reduced fat is fine)
1 cup grated Vidalia onion

Mix all together and bake in 350 oven for 20 minutes or until bubbly.

Serve with scoop fritos.
