SMOKED CHICKEN AND WILD RICE SALAD

2/3 cup wild rice
6 ounces thickly sliced smoked chicken, cut into 1/2 inch cubes
2/3 cup seedless grapes, quartered
1/2 cup mayonnaise
1/3 cup walnuts, coarsely chopped
4 ounces mushrooms, cleaned and sliced

Boil 2 cups of water in a medium saucepan. Add the wild rice, cover and turn the heat to low. Cook until just tender, 35 to 40 minutes.

Drain the rice and allow to cool.

Toss with the rest of the ingredients.
