GREAT OUTDOORS POTATOES
6 potatoes DRESSING: 1/4 cup olive oil 1 garlic clove, pureed 2 tsp. lemon juice 1 tsp. Dijon mustard 1 tsp. minced onion 1 tsp. paprika 1/2 tsp. coriander 1/2 tsp. fresh ground pepper
Scrub potatoes and cut into quarters, keeping skins on. Boil until tender; drain.
Coat potatoes with the dressing which you can prepare in advance.
Wrap the potato quarters in tin foil, and place on coals to brown.
Delicious with meat or fish.
