Chofan (Dominican Chow Fan) Servings: 4
1 lb. of boneless smoked pork chops 1/4 cup of boiled green peas (petit pois) 1/4 cup of boiled sweet corn 1/4 cup of leek diced finely 3 tablespoons of peanut oil (or oil of your preference) 4 tablespoons of soy sauce Salt 3 cups of rice cooked using your favorite white rice recipe
Before starting to cook, dice the pork chops into small cubes. Reserve.
Saute the pork with peas, corn, and leek using the oil. Add soy sauce and adjust salt to taste.
Add rice sauteing with the rest of the ingredients. Fluff the rice using a fork. Serve hot.
