Swiss Cheese Scramble This recipe comes from Heard in the Kitchen by the Heard Museum Guild.
2 cups trimmed soft bread cubes 1 3/4 cups milk 8 eggs, slightly beaten 3/4teaspoon salt 1/8 teaspoon pepper 2 Tablespoons butter or margarine 1/4 teaspoon seasoned salt 8 ounces Swiss cheese, sliced 2 Tablespoons melted butter or margarine 1/2 cup fine dry bread crumbs 8 slices crisp-fried bacon, crumbled.
Combine 2 cups bread cubes with milk in bowl; mix well. Let stand for 5 minutes. Drain, reserving milk.
Combine reserved milk, eggs, salt and pepper in bowl; mix well.
Scramble egg mixture in 2 Tablespoons butter in skillet until soft, stirring frequently.
Stir in bread cubes. Spoon into 9x9-inch shallow baking dish or 9 inch round baking dish. Sprinkle with seasoned salt. Arrange cheese slices over mixture. Sprinkle with mixture of 2 Tablespoons melted butter and 1/2 cup bread crumbs. Top with crumbled bacon.
Bake at 400 degreese F. for 10 to 15 minutes or until cheese melts.
