Layered Salad
Salad ingredients: 1 small head iceberg lettuce 1 (10 oz.) pkg. frozen peas, defrosted & drained 2 medium bell peppers, diced (vary colors for eye appeal if desired) 1 medium red onion, diced 3 medium carrots, peeled & shredded 2 cans sliced water chestnuts, rinsed & drained 2 cans (15 oz. each) pineapple tidbits, drained 2 cans (4 oz. each) sliced mushrooms, drained
Frosting ingredients: 1 1/2 cups mayo, light or fat free is fine (not salad dressing) 1 1/2 cups sour cream, light or fat free is fine 2 Tablespoons sugar
Topping ingredients: 3/4 lb grated cheddar cheese 3/4 lb bacon, diced and sauted until crisp.
Layer salad ingredients in serving dish in order given.
Mix frosting ingredients and spread over layered salad spreading to the edges of serving dish. Sprinkle with grated cheddar and diced cooked bacon.
Cover tightly and chill for at least two hours or overnight.
