Individual Herb-Cheese Tortes
4 oz. whipped cream cheese with chives 3 Tablespoons grated Parmesan Cheese 1 Tablespoon finely chopped fresh basil 4 oz. whipped cream cheese,plain 2 smoked cooked ham slices, finely chopped 1/2 teaspoon coarse grind black pepper 1 (4 1/2 oz.) box table wafer crackers 2 Tablespoons finely chopped parsley 1 hard-cooked egg yok, sieved fresh herbs for garnish, if desired
Stir together cream cheese with chives, parmesan cheese and basil in a small bowl until well blended.
Stir together plain cream cheese, ham and pepper in another small bowl until well blended.
Spread 1 teaspoonful parmesan cheese mixture onto one creacker; spread 1 teaspoonful ham mixture onto a second cracker. Stack crackers. Repeat with remaining spreads and crackers.
Toss together parsley and egg yolk in small bowl; sprinkle over appetizers. Garnish with freh herbs, if desired.
Makes 2 1/2 dozen.
