Dorothy’s Dumplings
Old-fashioned, fluffy dumplings are a true comfort food.
1 cup all-purpose flour 2 tablespoons cornstarch 3 teaspoons baking powder 1/2 teaspoon salt 1 egg, beaten 1/2 cup skim milk
In a medium bowl, combine flour, cornstarch, baking powder and salt. Stir in egg and milk; mix just until the dry ingredients are moistened.
Using a tablespoon, drop the dough onto a boiling stew or broth.
Cover tightly; boil gently 10 minutes or until dumplings are fluffy and no longer doughy underneath.
To get a tender, fluffy dumpling, be sure the stew is boiling and covered constantly. Serve immediately.
