Garlic Flavored French Bread (Pain d'Ail) Source: The Bread Lover's Bread Machine Cookbook by Beth HenspergerThis bread may be made using the ABM Delay Timer. Ingredients for 1 1/2-lb. loaf: 3 cloves garlic* 2 Tbsp. unsalted butter, softened 1 1/4 cups water 3 1/8 cup bread flour 1 Tbsp. gluten 1 Tbsp. sugar 1 1/2 tsp. salt 2 tsp. SAF yeast OR 2 1/2 tsp. bread machine yeast Ingredients for 2-lb. loaf: 4 cloves garlic* 3 Tbsp. unsalted butter, softened 1 1/2 cups water 4 cups bread flour 1 Tbsp. plus 1 tsp. gluten 1 1/2 Tbsp. sugar 1 3/4 tsp. salt 2 1/2 tsp. SAF yeast OR 1 Tbs. bread machine yeast Peel the garlic cloves and press into the butter. Mash together. Place all the ingredients in the bread machine pan per manufacturer's instructions; add the garlic butter with the liquid ingredients. Settings: Medium crust, French Bread cycle. When the baking cycle ends, immediately remove the bread from the pan and place it on a rack. Let cool to room temperature before slicing. *May use roasted garlic for a milder flavor.
