Mesclun Greens Chef Salad with Ham, Cheese and Celery Seed Dressing
3 to 4 tablespoons Canola oil 1 cup or so cubed leftover ham 1/4 cup minced yellow, green, or red onion 2 to 4 tablespoons cider vinegar 2 tablespoons ea: sugar and water 1/2 teaspoon dry mustard 1 teaspoon celery seed 4 to 6 cups torn salad greens 3 hard boiled eggs, sliced 1 cup shredded cheese of your choice (optional) Slices of tomato, croutons, cucumber, red onion (optional)
Heat oil in skillet and saute ham until crisp.
Add onion, vinegar, sugar, water, mustard and celery seed. Bring to a boil. Adjust seasonings to taste. Pour over Greens and toss gently.
Garnish each serving with slices of hard boiled eggs, cheese, tomato, croutons, cucumber and red onion.
