WILD BLUEBERRY SAUCE
2 (300g) cups Wild Blueberries, divided 1/2 (130 ml) cup water, divided 1/4 (50 g) cup sugar 1 teaspoon fresh lemon juice 2 teaspoons cornstarch
In a small sauce pan combine 1 cup (150g) wild blueberries, 1/4 cup (65ml) water, sugar and lemon juice. Stir and bring to a boil. Turn down heat, simmer 7 to 10 minutes.
Mix the cornstarch into 1/4 cup (65ml) water until dissolved and add to the Wild Blueberry mixture; stir until it thickens.
Add the remaining 1 cup (150g) of Wild Blueberries. Cook 3 minutes on low heat.
