PERFECT TOMATO AND RED ONION SALAD
2 perfectly red ripe beefsteak tomatoes 1/4 to 1/2 red onion 1/4 cup extra virgin olive oil 1/8 cup red wine vinegar dash of salt dash of black pepper dash of oregano 1/2 teaspoon granulated sugar
Clean and dice the tomato. Slice the red onion fairly thin. Place in a stainless steel bowl.
Drizzle the olive oil, red wine vinegar over the tomato chunks and red onion slices. Toss to coat.
Add into the bowl the salt, pepper, oregano and sugar and toss to coat.
Cover with plastic wrap and refrigerate until ready to serve.
If you like you may add in some cleaned, ripped crisp pieces of lettuce.
