SPINACH, APPLE, RAISIN AND FARMERS CHEESE SALAD
2 Granny Smith apples, cored, peeled, and diced 1/2 cup golden raisins 1/2 cup black raisins 2 oz. rum 12 ounces farmers' cheese, diced medium 5 oz. pine nuts, toasted 3 oz. peanuts 4 oz. olive oil 2 oz. cider vinegar salt and pepper to taste 1/2 pound spinach (cello)
Marinate the raisins and apples in the rum until all of the rum has been absorbed.
Toss the cheese, nuts, olive oil, and vinegar and mix with raisins and apples. Correct seasoning with salt and pepper.
Serve the mixture over spinach leaves.
